  • Preserving garlic

    If you dig up your onions and they are not suitable for drying to store, you can slice and freeze them . How can you do a similar thing with garlic? Can you mince it and freeze or is there a better way? Just wondering cos we dug up a bulb and some cloves seem suspiciously soft.

    Not sure but I'd like to know as loads of mine have split and may not store well. I looked into freezing it once, but I'm sure I read that it reduces the strength of flavour or something. Anyone else tried it? You could preserve it in oil but dunno how safe that is

      Mince or crush and freeze in ice cube trays. Don't try preserving in oil, there is a real risk of botulism apparently.

          I freeze the cloves, they are a bit squidgy when you defrost them but you are usually squidging them anyway when cooking with them.
          Possibly not right but works ok for me.
          I slice and freeze onions as well

            i still have half a jar preserved in vinegar, weird but ok, and a nice shade of bluey-green....this year, it's the freezer for them. I always though frozen food came out tasting stronger than when it went in...

              Freeze its easy

              I have had frozen garlic ever since I discovered chopped frozen garlic in Waitrose. I just chop and freeze in resealable bags, take out as and when needed and I use it for everything, smells like fresh cooking and tastes superb. I do this with all herbs including whole chillies just using the amount needed, no waste and always to hand.
