    Courgette glut? Fear Not.....make this!


    Chocolate & Courgette Cake

    Ingredients:

    120g butter or margarine (softened)
    125 ml sunflower or vegetable oil
    100g soft brown sugar
    200g caster sugar (golden or white)
    3 eggs, beaten
    130 ml milk
    350g plain flour
    4 tsp baking powder
    4 tblsp cocoa
    450 g courgettes, peeled and grated finely.
    100g dark chocolate chopped into chunks or use chocolate chips.
    1 tsp vanilla

    Instructions:


    Line a 10"/25cm loose bottomed cake tin with baking paper and set oven to 180C/350 deg F/Gas 4.

    Mix the butter, oil and both sugars together until light and fluffy. Gradually add the eggs, one at a time and then the milk until mixed thoroughly. This is quickest with an electric mixer, but not to hard to do by hand.

    Sift the dry ingredients together and fold into the mixture. Stir in courgettes, chocolate and vanilla. Pour into tin and level. Bake for 50 to 60 mins or until a fine skewer comes out clean.



    This makes a large cake, very moist, and suitable for a birthday cake. The courgette cannot be seen or tasted by small people who 'don't eat green things'. I topped mine with chocolate ganache;

    Weigh equal amounts of dark chocolate and double cream into a small saucepan, place onto a moderate heat and stir until thoroughly blended. Do not boil. Leave to cool, then pour over your cake. To cover a 10"/25cm cake, I used 250g of cream and chocolate.

        Glut? Glut? I'm still waiting for them to recover from the frost we had in June. JUNE! Looks beaut though.

            Yes, frost, first week in June I think. Damaged the runners, courgettes and squash and lightly singed the potato leaves. Beans are recovering well, courgies not so much. Our site is prone to frost pockets apparently, had one in July once I found out tother day

                I made a version of this last year from the BBC Good Food magazine and it was absolutely delicious (Didn't tell OH what was in it until he'd eaten it as he won't even eat carrot cake because he says he "can taste the carrots" and he wouldn't believe me).

                  Lol, looks amazing. I have 2 little reetlets who'd love this. I've made courgette cake using a carrot cake recipe and just substituing with courgettes and it worked a treat but this looks sooooooooooo much more scrumptious (I love that word it's so expressive )

                    The texture and taste are just like chocolate fudge cake, or a dense brownie. Actually, it could be baked in a roasting tin, and topped with chocolate fudge icing for a traybake for coffee mornings or lunchboxes etc.

                      Dang, that looks nice. I will try that!

                      Speaking of cake, I'm making this later Tinned Tomatoes: Blueberry Crumble Cake only not with blueberries. I have a handful of red, white abd black currants from plants newly planted last year, and seeing as they are so few, I want to do something special with them. Anyway I reckoned that would fit the bill!

                      Mmmmmmmmmmmm cake....

                        Hey Jules!
                        I'm all excited about making your version of this cake with a whopper courgette that my neighbours missed while I was away for a week, and I'm a bit perplexed.
                        Your ingredients only mention 100gms soft brown sugar, but the instructions tell you to combine BOTH sugars with the butter etc.
                        Am I having another senior moment?
                        Don't want to mess me cake up by missing sommit out!

                          I have been waiting for my courgettes to grow ever since reading this delicious recipe when it was posted... now there is one huge courgette so I came to look at the recipe again and was thinking the same thing about the sugar as you creemteez!

                            I picked 2 courgettes this morning from the polytunnel, put them on the floor whilst sorting out the ventilation and turned round and they had gone!

                            Pesky chickens stole them!

                              Looking at other recipes on the internet, my guess would be around 200g of either dark brown, or granulated/caster sugar. Might have an experiment later, but I don't think my courgette is large enough yet!
