  • Aubergine & Coconut Curry recipe

    This is lovely, just had it for tea and it was soooo good I wanted to share the recipe:

    Ingredients:
    1 onion roughly chopped
    2 garlic cloves chopped
    2 green chillis (or red depending on how hot you like it)
    Fresh Coriander - small bunch, leaves seperated from stems
    groundnut oil (I use sunflower)
    1 large aubergine, halved and cut into wedges.
    1 tsp salt (optional)
    ground cumin 1tsp
    ground coriander 1tsp
    tumeric 1tsp
    (I added fengugreek too)
    tamarind paste 1 tbsp (I used juice of a lime)
    coconut milk - 1 tin
    flaked almonds (optional)

    whizz first 4 ingredients into processor, with coriander stalks until pureed.
    Heat 2tbsp of oil in large frying pan and fry aubergine until golden and softening, remove from pan and add puree, fry for 5 mins or so then add dry spices and cook for further 2 mins. Add the tamarind and coconut milk and bring to a simmer, return aubergine and cook until it is tender (15-20 mins). Scatter flaked almonds and serve with homemade naans and/or rice.

    That sounds lovely - I might roast the aubergine instead, and switch the coconut milk for pure coconut block, but I'll try it at the weekend. I love tamarind...always tempted into trying recipes that include it!
