  • Courgette/Zucchini Slice Recipe

    All,
    I have been meaning to share this receipe with you all for ages. I first tasted this is Italy,at my friends wedding who was marry a lady from Australia and the family made this dish one.

    Perfect if you are like me and have loads of courgettes and eggs.

    Here we go

    550g Courgette
    1 medium onion, finely chopped
    130g bacon
    75g cheddar cheese
    112g sekf raising flour
    salt and pepper
    4 large eggs
    83ml oil

    Preheat oven to 180 degrees Celsius (160 degrees fan forced) line an 18cm x 28cm baking dish with baking paper

    Finally chop bacon & onion and place in a pan on a medium heat, fry for about six minutes, until onion has softened but not browned.

    Wash courgette and remove th ends and finely grate. (This is the bit I hate, )Place the courgette in a tea towel and squeeze out the excess liquid from the courgette. This prevents the slice from being too wet

    combine grated courgette, cooled onion and bacon mixture, cheese, flour, salt and pepper in a large bowel

    Use a fork to beat eggs and oil together in a small bowl. Add eggs and oil mixture to the other ingredients and stir to combine.

    Bake for about 45mins or untill slice is golden brown and firm to touch

    Set aside for 5/10 mins before slicing

    Store slice in the refrigerator, suitable for reheat

          Its a great familt favourite, and what I like about it you dont have to use the exact amounts on the items used - except the oil. You have to use the right about for the oil as my hubby found out when he put the wrong amount in and the poor slice was just swimming in the oil and was horrible to eat.

          I have found it does not keep very well, OK if you put in the fridge over night but thats it but its so yummy you wont need to keep it for long.

          I would also try on people who say they dont like courgette's- they might be surprised.

            Oooo, I bet this recipe would nice made like a rosti...*Ginger goes and cut's yet another courgette to eat *
