  • Runner Bean Pickle.

    If like me you have a glut of these yummy beans and don't want to give them all away...why not try this recipe. It's simple and very tasty...not sure how long it will keep though, it's never left long enough .

    RUNNER BEAN PICKLE.


    Ingredients.

    2 lbs runner beans
    4 or 5 onions
    1 ½ lbs demerara sugar
    1 ½ tablespoons turmeric powder
    1 ½ tablespoons english mustard powder
    1 ½ tablespoons cornflour
    1 ½ pints malt vinegar

    Method.

    1. Peal onions and cut up into chunks.
    2. Slice beans and boil together with onions in salted water until both are tender.
    3. Strain and drain well then cut up small or put through mincer.
    4. Add sugar and 1¼ pints vinegar and boil for 15 mins.
    5. Mix turmeric, mustard and cornflour with the remaining vinegar add to the bean & onions
    6. Boil for another 15mins. Allow to cool and put in jars.

    ENJOY .

    Hi Ginger.. my sister made seveal jars of this with last years glut.. It was super... If it was you who posted the recipe (i got it off here) last year, then thanks.
    She also did pickled whole french beans, that were wonderful and crisp, but seemed to vanish from the fridge.

      Thanks for the recipe GN I've got everything in the cupboard apart from Demetra sugar so was wondering if using white would make that much difference.
      Location....East Midlands.

        To be honest I'm not sure Bren. I've always used Demerara so I really couldn't say.

          My mum makes this pickle and uses white sugar - it still tastes great!

            GN I decided to not be lazy so walked across to the shops for Demetra sugar.

                I've just made this recipe and it says :-

                'to allow to cool then put in jars'

                before when I've done chutneys I've always done it when its still hot then put the lids on so they 'plop' once they've cooled. So was wondering will my pickle still store OK ?

                  My sister found a Jar of last years runner bean pickle and gave it to me... WOW! Its even better than it was then.
