  • Geranium Sugar Tea Loaf

    For those with scented leaf pelargoniums - I use attar of roses variety - stick some clean dry leaves all through your caster sugar. Store for 2-4 weeks. Sift to remove leaves thereafter.
    Recipe:
    6 large eggs
    4 egg yolks
    420g scented sugar
    320g SR flour
    1/2 tspn salt (I use fleur du sel)
    200g butter

    Beat eggs, egg yolks and sugar in a bowl until thick. Mix in flour (sieved) and salt, folding in. Next add your butter, melted first. Makes two loaves - halve mixture if you want one. Grease your tins or use greaseproof paper. 190 degrees C for around 35 minutes. Try with lavender sugar as an alternative using your own garden lavendar. I use cinnamon sugar in winter.
