Only problem I've had with bread mixes past their date is that the yeast sometimes isn't as effective and it's a little brick like!

OOD Bread Mix
I have used bread mix that is a year or more past its use-by date. It works fine as long as you add a spoonful of in-date dried yeast - it rises OK - not like a brick! Tastes OK also.
Just as well as I overstocked on Lidl bread mix before realising that it has a lot of rye flour in it, and my Panasonic is the 254 that cannot take rye flour.
The way round that is to add more yeast and use the Wholemeal Bake Rapid setting - no more bricks!
