Think of new receipes for courgette has been a real trial especailly one you can freeze

done courgette risotto, courgette cake, suated courgettes, roasted courgettes, courgette soup.

Ah Huh thought of courgette parmasan going to try it out tomorrow hoping it will be especailly good for those courgettes that think they are marrows.

just grate and freeze, then you can play with them when they're defrosted. i usually chop mine into chunks and freeze for soups, they keep their shape in them even after freezing but this year have gone for half grated, half chunky

I grate some, chunk some and slice some. Always cook the chunks and slices from frozen as they keep their shape better but now have a freezer full so am eating / giving the rest away.
