This is what I concocted from my tomato and french bean mountain.......
2lb(900g) toms skinned and chopped
8oz(225g) red onions thinly sliced
2lb(900g) french beans thinly sliced
8oz(225g) castor sugar
1pt(600ml) red wine vinegar
Sprig of thyme
1 tbsp oregano
1 tbsp salt
1 tbsp smoked paprika
Cook beans in slightly salted boiling water then drain
Put toms onions into a large pan , cover and cook gently till juices run.
Add vinegar, sugar, herbs(tied in muslin) salt and paprika then stir over a low heat until the sugar is dissolved.
Add the drained beans and bring to the boil.
Simmer uncovered until thick and pulpy then pot into warmed sterilised jars.
