  • Lemon Verbena in oil?

    Hiya
    Firstly apologies if this is the wrong place to ask this, I couldn decide which forum was correct....
    I have loads of lemon verbena, absolutely love it! I tried to save some dried leaves last year, but they didnt really work. (lost scent) I thought, as I have a lot, it might be worth infusing them in oil? Has anyone ever done this? If so, which oil is the best......olive oil has too stronger flavour?

    dont forget all oils have a shelf life too. A later pressing of olive oil will work, the just better than average one but not by much price is usually ok.
    Or a corn or vegetable oil.
    I've only crushed basil and parsley [spearately] and mixed with olive oil and put into small packets and frozen. It works for them, but I've never done lemon verebna, so I can't authoratively comment....
    Have you tried freezing the leaves between sheets of greaseproof?
