    Hi
    Not sure if this is in the right place, as i know im not growing the oranges LOL
    But does anyone have a good recipe for making a Whisky orange Marmalade?
    Made lots of other jams and chutneys, but fancy making my own marmalade for christmas.

    I used a standard marmalade recipe (Gary Rhodes - New British Classics is a nice one ) and just add a few tablespoons of whiskey at the end of cooking. MAKE SURE YOU ADD THE WHISKEY OFF THE HEAT AND AWAY FROM ANY NAKED FLAMES!!! It doesn't seem to affect the set and it's not an "inyerface" whiskey experience. I make a ginger variety too by just adding a tablespoon or two of grated ginger to the pan and stirring it in.
    By the way you may find it difficult to get Seville oranges at this time of year. The usually appear in the shops in January, but if you make a good batch and store it well it keeps for ever! I'm enjoying some "Vintage" stuff I made six years ago!!!!

      like you, I just want a subtle hint, not a full on blast! Hadnt thought about the seville season not starting till late! Sounds like I will have to wait till the new year!

        If you use 3lb 'eating' oranges to the juice of 1 lemon, it should work, or find my mandarine and orange marmalade recipe (somewhere on here) if that sort are easier to find. (any of the easy-peal types, mandarine, satsuma, clementine, etc.... will work)
        My method is a bit of a fiddle, but SO reliable!

          Choose a traditional marmalade recipe, and add a good heaped desert spoon of black treacle before testing for a set. Once you've got the set, stir in whisky to taste. The alcohol will evaporate off in the incredibly hot marmalade leaving you with the flavour.

          Another good one; soak sweetened dried cranberries in whisky for a few days until they've absorbed nearly all of the liquid. Then buy cheap thick cut marmalade, from Lidl or Aldi, and melt it down over a gentle heat. When it's lump free, stir in the cranberries, heat through and jar up. It might be cheating, but it's very tasty!

            I did the same with my damson jam - a (good) slog of whiskey at the end, before bottling/jarring it up

            Tasted some.. lovely and sweet, nice damson flavour coming through..... WHOOOOOSH - OOF. Geez. I think I put a bit too much in. My old man will like it though

              Gin in Damson Jam might have been a good combo too. I've done Lemon Marmalade with Gin and Fresh Mint. That went down well.
