    We've just stuffed ourselves silly, & I'm posting here so that I can find the recipes all in one place for next time (as opposed to on scraps of paper left in drawers)

    - Carrot Nut Roast
    - Red Wine Gravy
    - Leek & Chard Gratin
    - Chestnut and Mushroom Loaf (p.4)

    with roast beets, onions, garlic & spuds. Bullace chutney on the side

    Carrot Nut Roast

    Carrot Nut Roast

    serves 3-4

    2 largish carrots, grated
    1 onion, chopped finely
    3 tbsp breadcrumbs
    100g chopped nuts, toasted lightly
    1 tsp mixed chopped herbs
    1 egg, beaten
    1 tsp soy sauce
    1 tsp Marmite
    2 tbsp peanut butter

    Oven: 190c

    Mix all ingredients together, press into a 1lb loaf tin. Bake for about 30 mins

      Red Wine Gravy

      serves 6

      4 onions, finely chopped
      2 tbsp oil or butter
      4 tbsp plain flour
      400ml veg stock (check it's not too salty: Oxo tends to be)
      400ml red wine
      4 tbsp soy sauce

      Fry onions for about 10 mins until lightly browned. Add flour, stir & fry until browning. Gradually add all liquid, keep stirring & simmering until thickened.

      Blitz with a blender for a smoother consistency

        Leek & Chard Gratin/Bake

        serves 8

        1.5kg waxy spuds eg. Pink Fir Apple, thinly sliced & parboiled
        250g leeks, sliced
        2 onions, finely chopped
        1 bunch chard stems, sliced
        1 bunch chard leaves, finely shredded & wilted in boiling water
        40g butter
        400g tinned toms, chopped
        3 cloves garlic, crushed
        chopped chillies, if liked
        600ml creme fraiche
        100g (or more) of grated cheese

        Oven: 180c

        Fry leeks & onions in butter until softened, add sliced chard stems, fry for a further 5 mins. Add garlic & fry for another 2 mins or so. Chuck in a lasagne dish with toms, potatoes & chard leaves, and season. Add the chillies if you like food with a kick.

        Put creme fraiche in a saucepan & heat up to bubbling. Pour over the veg, top with cheese & whack in the oven.

        Give it about 30 mins or until golden brown on top.

                    I tend to make my own stocks......never add salt until using the stock in the final dish and always at the end of cooking of reducing the sauce.

                      Asda, mixed chopped nuts. You can use any mix you like. They're nicer if you toast them (dry fry) first, brings out the flavour

                        OK- thanks- but can I ask what your favourite mix of nuts is ?
                        I have my own hazelnuts/walnuts and chestnuts. Would almonds and peanuts be 'tastier'??

                        I have a veggie coming this weekend for 3 days and need to think up some yummy dishes

                          Actually, I don't have much of a sense of taste or smell any more*: I probably can't tell one nut from another. I think almonds would be a bit sweet and too many walnuts aren't great. Peanuts are good, and cheaper than most nuts. I think the packs of mixed chopped nuts are mostly peanuts.

                              The recipes look delicious, can't wait to try them.

                              I was thinking today that I'd love to read/hear some new vegetarian recipes. I eat meat but I love veggie food, I eat meat 2-3 days per week. I cook for a vegetarian (my daughter who lives at home) most days.
