  • Pheasant Help....

    I have 2 pheasants for tomorrow nights tea, however, I am going to be out all day.

    My thought was to bung them in the slow cooker, with red wine, onions, carrots, bay leaves, juniper berries for the day.

    Get them out, keep warm and thicken the sauce....

    Does that sound OK?

      Sounds better than OK although I can't stand eating birds at the moment - long story - shallots? Wild mushrooms? Celery? I love juniper berries...

        Yup- sounds good to me.
        The leg meat is quite a bit tougher than the breast and it can also seem a bit 'dry' so slow cooking would help the meat tenderise.

          Try and get a few toasted lardons of bacon in there as well and the fatty crispy bits. Bags of flavour and extra depth to the sauce!

            Sounds perfect and if you've got the time brown the birds before adding them to the slow cooker.
