Pumpkin Cake Recipe

    Sarz, I make mine in a tray, a la tray bake. This cake takes about 30 mins in one: easiest thing is, just keep doing the "sticky knife" test every 10 mins or so

    I made this for the staffroom on Wed, and had to go to the copier twice as so many people wanted the recipe. They couldn't believe there was pumpkin in it

      Thank you muchly, I'll try that I think I'm going to do some in a loaf tin too, I reckon will take 45/50 mins ish. If I get a timing, I'll post it up

        Right doing mine as we speak .... wish me luck. I do hope that is a pumpkin I've got - all my squashes were a bit naughty this year and has intra-Squash relations!

          I've used both Piggle, and it turns out fine with either. In fact I'm eyeing up a bought butternut squash as we speak!

                  Oh my - this was a Christmas Cake for me and my kind neighbour - nice with cream and nice on its own the next day. I went heavy on the walnuts as we all love them! Will post a piccie when I can find the cable from camera to puter!

                                I had some for breakfast, it was lovely, I liked the texture too, it's like those Jamaican Ginger cakes. I sense a new version with ginger coming on and maybe a little bit of treacle
                                I was surprised at the colour too, it's very dark.
