  • Can I join in?

    This weeks challenge has been completed......I forgot to post it in the proper thread but I have been working on a starter since last Saturday!

    My first loaf has just come out of the oven!!! I will photograph it now.......and post the photo when I can tomorrow!

    It's cooling.........I'm waiting to try it as a naughty midnight snack........week 2 challenge on hold!

    How cool is this sourdough thing.......I'm 49 for christs sake! I might call it Benedict!

    After the eggs.......

    • My last starter was an absolute monster. Huuuuuge jar with only a small amount in the bottom and it looked like a lava flow every morning for about a week so I had to keep it in the sink.Made lovely bread too.

      Think I will go start another one today.
      When weeding, the best way to make sure you are removing a weed and not a valuable plant is to pull on it.
      If it comes out of the ground easily, it is a valuable plant.

          • That lucks yummy Bren.

            It depends on my mood as to what I slash in my loaf. Most times it is just the one frome end to end.

            • Hit a crisis on day 3/4 with nothing happening, but kept removing stuff and feeding and Elvis is alive and well!

              • I got Paul Hollywoods BAKE book at Christmas and am just about to attempt my first Sourdough starter. I've tweeted Mr. Hollywood to ask about his recipe as he says to throw out half the mix and then feed again... Would anyone know if its possible to use this disgarded mix to make 2 starter mixes? I hate waste! x x

                • All the time I have been on this forum I never realised this thread existed! I just started an Amish Friendship Bread starter yesterday, which from what I can make out is the same thing as your sourdough starter. Its the first time I have tried this method, so I am looking forward to seeing how it works with interest. xx

                    I've read threads on 'the fresh loaf' and others saying you can keep the 'discarded starter' in the fridge for weeks and then use it in recipes like muffins, crumpets or breads.

                    I'm not keen on throwing food away un-necessarily but I think for the first 7 days or so when getting your starter started (as it where) that it'd be better to throw that away. But after that I see no reason not to use it?

                    We used the weekend bakers starter recipe which only uses about 30g-40g of rye flour per feed.

                    In another link from a baking site that I printed off it said that according to Dan Lepard you only need 50g of starter to make up 1kg of levain (50:50 flour & water) in 24 hours - so I think you don't necessarily need to keep great amounts of starter, but do need to plan ahead if you don't bake every day.

                    Here's Elvis today after removing some for a bake & feed last night...

                        Somewhere on this thread there's recipes for scone and pancakes using discard starter.

                              Manda I bought an ordinary raffia basket then added a cotton lining.

                              • Tried a bowl lined with floury teatowl....disaster as my dough stuck to it as I tried to turn it out.......too wet a dough I think.....

                                How dry should it be for those lovely loaves?
