    Hi

    Can anyone out there tell me if they know the best way to make turkey sausages.
    We really love the ones they sell in Asda, but they do not tell you what herbs and spices they put into them, just state that there are some included in the recipe . (Wise business move I suppose)!
    We treated ourselves to a sausage machine which works great but cannot yet find the right herb and spices to go in.
    If anyone out there has any suggestions it would be great.

    I have made turkey burgers in the past and mixed dry stuffing mixture in. Worked really well so that would be sage and onion. There could be endless variations so why not experiment using your favourite herbs / spices.

        the chilli ones?
        urkey (72%) , Water , Rusk [Wheat Flour, Water, Salt, Raising Agent (Ammonium Carbonates)] , Sweet Chilli Seasoning (5.0%) [Dried Red Peppers, Salt, Sugar, Spices, Onion Powder, Chilli Powder [Garlic, Salt, Herb, Spices] , Garlic Powder, Yeast Extract] , Sausage Casing [Beef Collagen] .
        the 'spices' is probably chilli powder.

          I'm with donna on this one, you can't replicate the taste unless you put in stuff you probably dont want to be eating.
          make a sweet chilli sauce yourself and add, fry off a little bit to see what it's like, then add stuff till you approximate the taste.
          Try anything and everything, for instance, I've found Maggi sauce [a liquid seasoning heavy on the lovage] replicates the flavour of Chinese takeaway noodles better than soy sauce.

            Like Taff says there is going to be stuff in there that you don't want to add. The stuffing mix I added to the burgers helped to bind the mixture. What are you using for the casing?

              will have to be trial and error till you find what you prefer just think of all the sausage you will have to eat till you find the one you like best and dont forget make notes of what you put in each time

                  Thank you all so much for your replies.
                  We bought some skins from the internet from tongmaster. That should be fun!
                  Am about to look on the internet address Coastie suggested so if I come up with something mouthwateringly delicious I will write it down for you guys though as we all know what I might love you might not. But we will see.
