Probably too late, but no reason you can make mini-sized versions of things like Madeira cake; make them in a baked-bean tin, then just decorate like full sized ones. You might even try mini-sized Simnel cakes that way (fiddly, but should keep a few days once made).

I think make a cupcake,one lemon and one choc. Then trim them into flat vic sponge shape,fill with icing,dust with sugar or grated choc and serve on a doily.
