  • Fave leek recipes please................

    Leeks have fattened up well during the winter. They will soon be running to seed though! My freezers full and I have a glut. Eating leeks nigh on every supper time lately.


    Any chance of you lot sharing your favourite leek recipes and I'll give em a try!

    My leeks are fiddlin' 'n' small.

    If I pick about 4 of them, I'll get enough to liven up some mashed potato.

    I must try harder this year.

      Potato and leek soup?
      Cheese and leek tart/flan/quiche?

      I made a bacon and leek sauce and poured it over some pan fried chicken breasts, it was lovely. Just fry off the bacon bits in some butter, add the leeks then just make it as per a bechamel sauce.

      I'm afraid i'm not good with recipes, I am a 'goesintae' cook and make it up as I go along.

      Edit to add: There was plenty sauce left over and I cooked up some pasta and mixed the sauce through it, topped with grated cheese and spring onion and eldest Son took it to work for lunch.

          Cheesy leek bake - slice leeks, soften in butter. Remove and place into ovenproof dish. Make cheese or white sauce and place over leeks. Breadcrumbs and cheese over top and pop in oven until browned.

          Leek and Potato soup
          Slice leeks, soften in butter and a little oil. Add salt and pepper, I add a pinch of mace or nutmeg. Add chicken stock to cover potato slices added atop leeks. Simmer for 20 mins. Blitz, add a swirl of cream. Requires crusty loaf and butter...mmm!

            I love creamed leeks as a side dish with anything. Just cut them up finely, cook them slowly in a bit of oil/butter until soft, about 15 minutes. Add a good slosh of cream and stir in. season to taste with salt and pepper and let simmer for a couple of mins.

              I made some Kale and chorizo soup and used leeks instead of onions .......
              Fry some sliced chorizo, add chopped leeks, add a couple of diced potatoes , cook for a couple of mins then add in some veg stock and bring to the boil. simmer ti tatties are soft then mash enough to leave some lumpy bits. Add in some shredded kale and cook for a few mins till kale is cooked.

                  Leek, broccoli & cheese tart.

                  Saute leeks (can't remember how many I used, 1 maybe 2?), season and stir in 1tsp dried thyme, then turn off heat and leave to cool a little. Blanche small broccoli florets for 3 mins, rinse under cool water to keep green colour.

                  Line a baking sheet with greaseproof paper. Roll out a sheet of ready-rolled puff pastry on to the baking sheet. Sparingly spread Dijon mustard over it leaving 2cm sides clear.

                  Then spread leek mixture on top, then top with the broccoli. Add grated cheese over the top, then cook in a preheated oven (220 degrees c) for about 30 mins.

                  Alternatively a leek, celery and bean stew.

                    Not so much a recipe, more 'wot I did with wot I 'ad in fridge'.

                    Leeks chopped into chunks, red onions chopped into chunks. Sweat in heavy pan with a little olive oil till soft and beginning to catch. Add a little vinegar to take bits off the bottom of the pan, stir and put into serving dish, add a little more vinegar and a drop of hot water to clean bottom of pan and tip onto leek mixture. Serve with a roast.

                    Woz yummy.

                      What they do here is boil them and serve cold at the start of the meal with a vinaigrette. Lovely

                      If you've got a bit of salmon, a lovely way to serve it is with mashed potatoes and.....
                      grate a couple of carrots, finely shred a couple of leeks. Cook in a little butter with perhaps a drop of water so that it doesn't catch. season. When soft and lovely, serve. It's one of the best flavour combinations.

                          Leek-and-ham pancakes
                          trim leeks to about 8 inches (you can use the rest up in other ways) steam for about 12 mins
                          make, buy or defrost pancakes
                          Make a mushrrom sauce (instructions below, but sorry vague on quaitities)
                          lay a warmed slice of ham on a pancake add a warm, freshly cooked leek drizzle some mushroom sauce over, and roll up.
                          2 of these make a lunch, supper or starter, 4 with other veg for a filling main course

                          Mushroom sauce, chop up a few mushrooms, fry gently, add flour to make a roux, then milk to get the thickness.
                          a half-pint of milk and 2 massive mushrooms (or equivalent in smaller ones, quarter lb?) should make enough suace for about 8 pancakes.

                            Egg-and-potato casserole, recipe for 4, adapts readily for more or less people.
                            2-3 rashers bacon chopped fairly small
                            4 eggs
                            1½lb (prepared weight) potaoes, peeled and diced
                            1 large leek (or use the trimmings from above recipe), extra is OK, chopped into biggish chunks
                            ½pint milk
                            1oz grated cheese

                            Grease an overproof dish using butter
                            use a third of the potato to make a layer in the base
                            use half the leek for the next layer
                            half the bacon
                            repeat potato, leek bacon, potato
                            pour the milk over, put the lid on and give it an hour in the oven at about gas 4-5
                            Take the lid off, make dents in the top layer of potato sprinkle grated cheese over and break an egg into each dent
                            return to oven without lid for 10 mins, or until eggs are just set.
                            Flowers come in too many colours to see the world in black-and-white.

                              just brasied leeks in a white or a cheese sauce [ but make the sauce properly, none of your packet rubbish...]
