Sliced leeks, feta or goat cheese, kalamata olives and fresh dill all scattered over puff pastry and baked.
Dredge a nice thick piece of cod in butter and lemon juice, top with chopped leeks, thyme and parsley, drizzle a bit more butter and lemon over and bake until the fish is done. We usually serve this with couscous (cooked with chicken stock and a bit of lemon juice/zest) and maybe a green veg.
Delia's chicken and leek pie is a bit faffy but oh so good.March is the new winter.Comment
