    Sounds delicious, but if you eat all the elder flowers, how will you get elder berries??

      oh yehhhhhh LOL

      WELL only a half made into elderflower cordial ( with flowers) and half left for berries

      Plus there's only little old me and the dog here and I'm not THAT much of a glutton LOL!
      The tree is huge and will last the harvesting of one little fae I'm guessing

          I made elderflower cordial last year - it was lovely but needed to be kept in the fridge.

          Elderflower fritters are lovely as well. I have given up making the elderflower champagne now though as I never made any that was worth the bother.

          I will try elderflowers in with the gooseberries though! Probably in a crumble as I'm mad keen on them at the moment
          Whooops - now what are the dogs getting up to?

              (to the tune of Muller Ad..) got my muslin, got my elderflowers, got my labels, got my bottles, got my oranges, got my lemons, got my citric acid, got my corks...
              ...have no corker LOL -

              and as I was saving money getting wine bottles, as opposed to swing top lid bottles, can't use screw top lids as you normally do with cordial lol now looking at plastic stoppers and plastic champagne corks or... just go and buy a corker I guess lol

                I made elderflower champers last year. Bottled it in 2lt fizzy drinks bottles with a screw top lid and burped it every so often ............be warned it can get explosive as it ferments in the bottle . Tasted ok but prefer ginger beer

                  Fritters too, and I'm determined to make some cordial this year. Love it but haven't managed to make it myself yet.

                    You don't really need a corker - I just boil the corks till they are soft (using a saucer to keep them weighted down in the boiling water) and then whip them out, wrap the top in a teatowel and shove the softened cork into the bottle neck - bingo.
                    Whooops - now what are the dogs getting up to?

                      someone told me not to boil corks when making wine for some reason I cannot remember - but I don't suppose it matters so much with cordial, as you are not preventing oxidisation in the same way I guess? so may try this..thanks Jeanied

                        I've made 12 litres of fizz so far and got 12 more on the go. It's nice and refreshing in all this hot, sticky weather we've been having. I do like it for my Lottie Kir Royale - elderflower fizz and a drop of homemade cassis. Blackcurrant bushes look good this year, so will try to make a few bottles for gifts too. We've got our street party tomorrow - might take a few bottles of fizz to that!
