    Hi me again! sorry

    Most years I make strawberry ice cream - its good and flavour wise lovely and fresh, but I think there is room for improvement on the texture.

    Anyone got a really creamy rich recipe (if there is such a thing even?)
    I don't have an ice cream maker but am happy to do lots of regular beating, this I do for my old recipe! 11pm the other night - made some Blackcurrant

    Ben & Jerry's recipe:

    1 pint of strawberries, sliced
    2/3 cup of sugar
    juice of 1/2 lemon

    Place in fridge for at least 1 hour.

    Make cream base:

    2 eggs whisked for 2 minutes
    Slowly add 3/4 cup sugar and whisk for a further minute
    Add 2 cups of double cream and 1 cup of milk and mix.

    Mash strawberries and add to cream base.

    I add to ice cream maker but you will have to do the beating.

      Headfry, the easiest recipe I can think of is an old "cheat" of mine,
      1lt Ambrosia custard inna carton,
      1/2 lt pureed ripe strawbs + 200g sugar + 1tsp glycerine mixed together,
      1/2 lt Double cream + 50g caster sugar, whipped to soft peak! not grainy!
      mix fruit into custard, fold in whipped cream, carefully adjust colour with pink food colouring, turn into a container and freeze,
      recipe can be used for any soft fruit, for chocolate replace fruit puree with custard + 1 heaped tbs cocoa powder dissolved in a little v hot water blend with custard and proceed, for coffee do same, for caramel cook 6oz sugar with a little water until caramel colour, add a few spoons of hot water (be careful!), when cool fold into finished mix to leave streaks, vanilla.... you can guesse can't you, happy sundaes
      Eat well, live well, drink moderately and be happy (hic!)

        Thanks folks I have made a batch from an old book I had......seemed very pale and not very 'strawberry'
        before it froze. Will try it next week!
