  • Courgette and Sesame/Feta Muffins

    I make these to use up some of the courgette glut

    and cos I'm a greedy cow

    Courgette and Seseame Muffins

    6 tbsp sunflower oil or 85g butter melted and cooled
    300g courgette
    280g plain flour
    1 tbsp baking powder
    pinch of salt
    fresh ground black pepper
    2 tbsp sesame seeds
    1/2 tsp dried mixed herbs
    2 eggs
    250 ml buttermilk (but I use milk)

    preheat the oven to 200c/400f/gas mark 6

    grease a 12 hole muffin tin (i just use muffin papers)
    grate the courgettes and squeeze out any excess moisture
    sift together flour, baking powder salt and pepper to taste add the sesame seeds and the mixed herbs
    beat the eggs and beat in the buttermilk and oil/butter
    Make a well in the dry ingredients and pour in the liquid ingredients and add the courgettes
    stir gently until just combined do not overmix.
    spoon the mix into the muffin tin/cases scatter over the remaining sesame seeds
    bake in the oven for 20 minutes or until well risen, golden brown and firm to the touch.

    for courgette and feta muffins

    Add 150g of feta to the mix

    I just made some with blue cheese! MMmmmmmmm

    try to not eat them all at once! YUM YUM YUM

            I fancy some chopped walnuts with blue cheese and courgettes.........All I need are some courgettes - even flowers would be a start

              Mmmmmmm think we need a thread for courgette recipes, I can't wait to try these, and am collecting jars and vinegar for the pickles. Have a lovely recipe for a courgette and Parmesan tart I will dig out. Yum yum!

                Mmmmmm Pear and walnut sounds good. the Blue cheese on its own was a little heavy. So I think I will reduce the amount next time.... I was thinking of pear with it too.... Mmmm!

                  Pear, walnut and blue cheese (sometimes Stilton, or Cambozola), one of my favourite combinations as a light lunch or in a sarnie
