For those of you who have a glut of toms, and you want to make sauce to freeze, the easiest way I've found is with one of these.

I do HFW roast tom sauce, then chuck them in the juicer and you get the best, smooth sauce ever. It separates all the skin and pips for you. I didn't pay very much for mine. Worth shopping about for if you're in the market for a gadget. it's also good for other things, obviously.
