Bottle of Jamesons went down smooth - first couple were in Irish Coffees - my OH makes the best Irish Coffee ever - to the extent where we have been out for a meal and if the Irish Coffee at the end of the meal isn't up to scratch, she'll wander into the kitchens and give them an on the spot lesson in how to do it properly - and god forbid anyone serves her one topped with squirty cream from a can

Whiskey and Beer

Hi Sewer Rat, Your O H is a woman of excellent taste. We drink only the best whiskey 'Jemesons and use it to make our Irish coffee. We don,t make colcannon very ofter but irish stew regularly especially in this cold weather.
Have you ever tasted poteen? very potent but very very special. By the way, the guinness here is to die for, the barman must have that special skill of pulling the pint and then letting it settle. Definitely not to be rushed and well waiting for.

Paddy is my preferred Irish whiskey. It costs less than most but seems to taste the best in my humble opinion. I tend to drink whiskey straight and prefer Irish to Scottish whiskey. Did anyone know that Wales used to make its own whiskey years ago until the law was changed in favour of Scotland? Welsh distilling was banned, resulting in welsh families leaving the UK and going to the USA. One famous Welsh recipe can still be found in Jack Daniels. The USA distillers were one of the Welsh families that left Wales to carry on distilling elsewhere.

We had some poteen in Kinsale last year, the stuff was enough to make you go blind and is only fit for screen wash. Bring on the Jamesons any day.

Here is the way my OH makes her Irish Coffee - have just asked her to go through it again, so this is accurate - but there are no great secrets.
Using a warm glass, pour your whiskey in the glass, put two sugars in it then, leaving the spoon in the glass, pour in the coffee (this should be hot - definitely not off the plate of the coffee machines in restaurants).Stir and pour the cream on top - if the cream is fresh and also freshly whipped, it should not sink. So there you go - nothing terribly complicated.
Just remember, warm the glass, hot coffee, fresh cream, and sugar it before the coffee and cream go in.
Sit back, relax and enjoy
Amount of whiskey to be determined by personal taste - I find trial and error is a good way of doing this - use about a normal pub measuer as a guide though.

Thank you Nicos - this was a lovely thread. We forgot it was St. Patricks Day, so your reminder had us with glass of Jamesons and reminising (how do you spell that ? I'm lost without a spellchecker!) about holidays in Ireland.

SR - sorry to ask a silly question, but when do you put in the whisky and how much ?
