  • Roast veg soup

    Hi I have roasted some veg any one know how I turn it into soup. Thanks

    Yup, whizz it up in a food processor (or not) and add a vegetable or chicken stock (or a couple if needed), a bit of chilli if you like et voilla!
    Roasted vegetables make a nice sauce to go with pasta too

          Roast veg soup, followed by roast veg pasta, finished off with roast veg risotto. If there's a bit left you could have it with icecream

              I'd fry a chopped onion in a knob of butter until it softens. Add any stock you've got. Fresh chicken stock is good, but a vegetable stock cube in 500ml of water will do. Add the roasted vegetables, boil up for a few minutes then blitz it up with a stick blender. Season with salt and pepper. Job done.

              In my fridge I have roasted parsnip and red pepper soup, made yesterday. I managed to lose a couple of courgettes and a potato in it too. It's not bad - quite nice but not as good as I'd hoped. Not sure parsnip and pepper was the best combination, but it's what I had getting old in the fridge.

                    Plus if you save your parmesan cheese rinds (aka parm butts) they're a good addition to any soup, best to fish them out before blending or eating though.

                        They add flavour, just like black cardamoms in curry (but you wouldn't want to eat them either)

                          Oh I see. Just had the MOST delicious soup..... put all the roasted veg in a pan mashed it with a potato masher and a tub of veggiee water and heated yum.... simples

                            What veggies did you use, Stella? Last time I did a combination roasted veggie soup it ended up being a bit wersh. Need to put some more flavours in next time...

                              A stick blender is a very useful tool for soup.
