    Hi can anyone tell how to make piccalilli less vinigar tasteing,mine is quite stong made 3 months ago Thanks

      If I recall cider vinegar is the mildest for pickles. ( could be wrong though!)

        Hmmm,I read as veg man wanting to reduce the taste of the vinegar,to which I would say add some ground nutmeg &/or ginger,also possibly add a little all spice,but take care & only add very small amounts of any or all with frequent tastings.

          Or maybe a little sugar. Unfortunately if malt or pickling vinegar was used it will be very difficult to moderate the strong taste.

            What about attempting to blandify it by mixing up some more cornflour paste, and reheating the piccalilli with that - maybe some sugar as well?

              Thanks all, it was pickling vinegar i used may be next time i will try cider vinegar.

                I use white wine vingar and add my own spices, make sure your vinegar is at least 5%acidity .
                Even for pickled onions I spice my own vinegar as it's not as vinegary as the ready spiced (even using malt )

                  My Granny always thickened with flour and used ordinary brown vinegar, runner beans, cauliflower and silverskin onions grown by Grandad, kept for months it was the best you ever tasted.
                  Eat well, live well, drink moderately and be happy (hic!)
