Hmmm,I read as veg man wanting to reduce the taste of the vinegar,to which I would say add some ground nutmeg &/or ginger,also possibly add a little all spice,but take care & only add very small amounts of any or all with frequent tastings.He who smiles in the face of adversity,has already decided who to blame

I use white wine vingar and add my own spices, make sure your vinegar is at least 5%acidity .
Even for pickled onions I spice my own vinegar as it's not as vinegary as the ready spiced (even using malt )S*d the housework I have a lottie to dig
