  • It's that time of year......

    When my thoughts turn to emptying the freezer for defrosting ready for the new season. Both freezers are rammed and before you now it there won't be time before the rhubarb is in full flow....(mines popping its head up already ). So I've made a start with cooking up all the orange and lemon shells that I chuck in the freezer (waste not want not as me mum used to say ). All in a pan with an added cooking apple I found , enough water to cover and some bashed cardamon pods. Brought to the boil, covered and left to simmer till the apple was mush and the citrus was soft. Then dripped through the jelly bag overnight . Resulting liquid measured , sugar added and stirred over a low heat till sugar dissolved. Then bring to boil and boil rapidly till setting point. Result, a rather nice citrusy(sp?) jelly . Has been named Jumble Jelly
    Next might be a Jumbleberry jam .............

    I used to freeze the citrus peels too and add them to marmalade to make it extra peely - or to make a pseudo marmalade out of season!

        I really miss the jam making. I seriously considered making marmalade this month - Seville with Macallan Cask Strength is the BH's favourite. But now that he's diabetic it seems pointless.

        I could make diabetic marmalade but you need shedloads of very odd and very expensive ingredients. The polyol sugar substitutes are hugely expensive. And they don't preserve like sugar so you need preservatives and thickeners too. Much cheaper to buy the occasional jar of reduced sugar marmalade.

        Not happy about it though.

          I've just bought a pile of clementines for that very purpose Bins!...I know...I'm supposed to be using up stored fruit- so I'm going to try another version a of jumblefruit jam!

          My freezers are also stuffed full- tis hard to find room to put chicken stock in it!

              I've only ever made Jam twice. Bullace both times - they grow in a couple of places locally, round here. I don't add too much sugar, as I like it tart - it's useful in sauces, too. I do find I end up with jars of it in the back of the cupboard as I never know anyone who wants it.

              Perhaps I'll start saving my lemon and lime leftovers and freezing them. I may attempt making sommat with them, or send the lot off to whoever wants them!

                Nicos , we had a chicken yesterday .......I now have two half litre portions of chicken stock to ram in ...I'm not doing very well and to make matters worse the seville oranges are in the market and guess what ?....


                They freeze beautifully ........

                  Thought we were gonna talk abot Marmalade then! LOL

                  It always makes me feel like its a new year when I see the Saville Oranges in the greengrocers!

                  Mine are currently boiling away after ages cutting up skins etc....

                    I've made two different lots of marmalade and am no closer to clearing out the freezer...in fact I've just chucked some more oranges in it.

                      They are not in my market yet sob.

                        I'm not sure on that cos of the cream.......I think you can freeze the horseradish .

                            How long does cream last for in the freezer?...a couple of months?...but does it separate when defrosted???....I'd certainly freeze it for a few weeks ( hate waste) but then expect to stir in a bit more cream when defrosted.

                              If your butter hasn't already been frozen then yes. Wrap it in portions or make it into a roll and wrap then you can cut off what you need whilst its still frozen .

                              i'd just wrap the horseradish and freeze like I do ginger then grate whislt still frozen.......
