When my thoughts turn to emptying the freezer for defrosting ready for the new season. Both freezers are rammed and before you now it there won't be time before the rhubarb is in full flow....(mines popping its head up already ). So I've made a start with cooking up all the orange and lemon shells that I chuck in the freezer (waste not want not as me mum used to say ). All in a pan with an added cooking apple I found , enough water to cover and some bashed cardamon pods. Brought to the boil, covered and left to simmer till the apple was mush and the citrus was soft. Then dripped through the jelly bag overnight . Resulting liquid measured , sugar added and stirred over a low heat till sugar dissolved. Then bring to boil and boil rapidly till setting point. Result, a rather nice citrusy(sp?) jelly . Has been named Jumble Jelly
