I have a smoker like that too though haven't used it for ages. Used to do fish mainly, shell-on prawns, mushrooms, and used apple wood from the garden cut with a handsaw.

We're going to use our chiminea at the allotment for smoking a few bits this year. I love smoked food. I've just bought some bacon today which the butcher had smoked over cherrywood - smells wonderful. We stayed a few hundred yards from this smokehouse in Connemara last year Connemara Smokehouse - their fish was so delicious they were lucky I didn't ask them to adopt me.
        I don't roll on Shabbos
