My next door neighbour said I had to spread the word about my patented recipe for apple butter - so here goes. I have to say its well worth the 15mins preparation time!
2lb cooking apples
Half teaspoon grated nutmeg
1 lemon
1 pint water
1 1/2lb sugar
Simmer everyhting (except the sugar!) until its reeduced to a pulp (about an hour).
Press through a sieve then add to a pan with the sugar. This is the trick - stir on a low heat until sugar is disolved, then boil hard (stir often) for about 30 mins.
Transfer to pots and enjoy! It keeps for about 3 months but it's usually all gone sooner! Its delicious, trust me!
