    Hi, my little grandson has a load of food allergies including wheat,dairy and soya but he loves his food and it just means we have to be a bit more adventurous and this is where i need your help! I want to make a sort of baked bean dish for him but hes also allergic to tomatoes,anyone got any ideas?he loves any spices so thats not a problem

        If you caramelize onions really, really well (not burn!) before adding any liquid you will get a rich sauce from all the dark bits on the bottom of the pan without needing tomatoes. A little sugar will help, also adding a splash of balsamic vinegar. A long slow cooking will make the whole dish thicker, without using flour etc.

          You can substitute most beans for others in recipes. Just remember that some take longer to cook than others.

              Recipe for creamy borlotti beans:

              1 – 1.5 litres vegetable stock
              500g dried borlotti beans (soaked overnight)
              1 onion finely diced
              1 leek finely diced
              2 cloves of garlic finely chopped
              1 bay leaf
              10/15 sage leaves finely chopped
              1 knob of butter
              Olive oil
              Salt and pepper

              In a heavy saucepan add the olive oil, gently sweat onions, leeks and garlic until soft, drain the beans and stir into the pan, add veg stock and gently boil until beans are cooked and the cooking liquor has reduced by 90%, then add butter and sage and season to taste.


              Or perhaps try making a "red" sauce with roasted red pepper, onion and garlic and blitz in a blender with some stock.

                Thanks all-i'll certainly give these a go and thanks,pyrenese for the idea of the caramelised onions. I am wondering which of these would most closely resemble good old baked beans!

                  We get fresh beans here that are great.

                  Put them in a pan with a diced onion, carrot, celery and BACON!
                  Add stock and simmer until all is rich and tender. I would add tomato paste but obviously you can't for your little one.
                  I like PP's idea of caramelised onions too.

                    I am wracking my brains here... there is a chef whos daughter is also allergic to a lot of foods, he made a tom sauce substitute for her using mango. I will away and search.

                        Strangely, IIRC Hugh FW did a sauce using strawberries that kinda worked. You could make what I call "cowboy beans" which is fried bacon and onion with some herbs (whatever you fancy, I like parsley, thyme and sage) add beans and some veg stock and simmer for a bit.

                        They go great on toast.

                        Adding some roasted peppers will work here too if you want to sweeten it up a bit, as I tend to add some sliced toms near the end, so they would be a good substitution.
