You could top a cottage/shepherd's pie with it. Or eat it mashed with some butter? Or , perhaps make some veggie burgers from it?
Sweat a finely chopped onion with a crushed clove of garlic, a sprinkle of chilli and a tsp of ground cumin, cook a tin of kidney beans (or cannelini/borlotti/pinto), drain them and mash them - mix this all together, add a tbsp of plain flou, mix in. Mould into burger shapes, pop in the fridge for a bit then fry them in a little olive oil. Or freeze them and use them when you are ready (but don't stack them unless you has wax discs).
While wearing your night clothes, plant cucumbers on the 1st May before the sun comes up, and they will not be attacked by bugs.
I've tried a couple of the above suggestions - the vege burgers and eating with butter, (a little) sugar and cinnamon. Delicious and I plan to try the rest when I have some more leftover sweet potato.

Sweet potato and french bean pasties, add a little Grated ginger, chili, turmeric, cumin, coriander salt and pepper, put into pastry cases - they taste wonderful, even my kids like them

I'm an official nutter - an official 'cropper' of a nutter! I am sooooo pleased to be a cropper! Hurrah!
Yay! Today I came across sweet potato on offer at the supermarket - 3 packs for 2 euro, with about 4 medium size potatoes in each. This shop does this 3 packs / €2 offer on different veg sometimes.
Now I can get going and try some more of these suggestions.
