I cut mine in half across the middle and either steam them.... or stuff them, put the 'lid' back on and bake them in the oven wrapped in foil and a big blob of butter.

Pan fried with a small amount of olive oil and garlic. Keeps the flavour much better than steaming although roasted or stuffed is also good although I tend to brush with oil rather than a big dod of butter.

I cook mine for a while in a suacepan to soften a bit- then take the seeds out, fill with savoury rice mix, cover the top with cheese slices and pour a tomato based sauce around it and bung in oven til cheese is brown and bubblng and squash is finished cooking YUM!

Seconded. In deli's stuffed patty pans or stuffed peppers are the sort of thing that they charge a lot for. I like a marina sauce and mozzarella, rather like the above recipe. I also like a mix of pork/sausage/mortadella with rice or breadcrumbs and with or without a cheese sauce...
..just wish I'd grown some again, after thinking about that menu....
Little ones can be lightly pickled whole, then scoop out a hollow in the top and fill with a herby goats cheese for serving as part of an anti-pasti. Num, num, num.....
