It's lettuce time for Mysterious Gardener, so last night I made 2 salads The first one is a chicken salad, for the second one I used smoked salmon and fennel. Enjoy!
Chicken salad with yoghurt dressing
Ingredients:
7oz chopped lettuce
1 chicken breast
½ cup unsweetened yoghurt
2 tablespoons mayonnaise
1 small teaspoon Dijon mustard
Salt and pepper to taste
How do you make it?
1. Wash the lettuce and chop it into large pieces
2. Now, we’re going to make the dressing for your salad. Mix ½ cup unsweetened yoghurt, 2 tablespoons mayonnaise, 1 small teaspoon of Dijon mustard in a bowl. Add a bit of ground black pepper to taste
3. Chop the chicken breast into small cubes, season it with salt and pepper to taste. Next, fry them in a pan until they’re gold-brown
4. Mix everything in a salad bowl and serve
Salmon and fennel salad
Ingredients:
5 oz chopped lettuce
6 oz chopped smoked salmon
1 fennel
3 oz cherry tomatoes
Optional: dressing (like the yoghurt dressing above)
How do you make it?
1. Wash the lettuce and chop it into large pieces
2. Wash the fennel and clean it. First, cut off the bottom and the stalks on the top. Next, cut the fennel in half and cut out the hard center. Chop the fennel into small pieces
3. Cut the cherry tomatoes in half and chop the smoked salmon into small pieces
4. Mix everything in a salad bowl and serve
