  • Quick and easy tomato soup

    I have had a glut of cherry tomatoes and was looking for different ways to use them and found a nice simple recipe and thought I would share.

    1.5kg of tomatoes, coat with olive oil and then roast for 15minutes or until they start go crispy along with a pepper. Best to use a roasting tray as it produces a lot of juice.

    Blend and then sieve to remove the bits and then add water, if needed, to get the required consistantly.

    Hey presto tomato and pepper soup.

      Another lovely soup is so simple : in a big pan put a couple of quartered onions, a heap of halved toms, chicken stock to cover, herbs. Boil up, then whazz up. Seive if you don't want pips.
