Rhubarb, rhubarb, rhubarb every where

Hi everyone,
I know it is a bit early but I am on the look out for advice on what to do with loads of rhubarb. Where we live we have a mega rhubarb plant that just keeps giving and giving. Then down my new allotment plot I have counted 6 rhubarb plants. People don't seem to want the raw stuff just the finished cooked item. Did a rhubarb and orange type jam last year but it looked very green colour and it put people off. Tasted ok am still eating it.

If you don't want that many plants, then just dig them up and get rid of them.

I love rhubarb. I made a lot of apple and rhubarb last year with mine. This year the chooks are rhubarbing more than me. That has to change.

Just picked a load of rhubarb for a preserving session..
Rhubarb Curd. - I've got a ton of eggs to use!

Rhubarb and Zest and juice of a couple of oranges (add a bit of ginger if you like a little heat!)

1.simmer rhubarb, zest and juice in a pan until you have a thick purée.
2. Rub purée through nylon sieve. Discard pulp ( or add to some frozen fruit in freezer and make jam!)

To each pint of purée, use 4oz butter, 1lb sugar and 3 large eggs.

3. In a double saucepan over hot water gently simmer purée, butter and sugar until the sugar has dissolved.
4. Beat eggs and add to mixture . Not too hot or you'll end up with scrambled eggs. Cook slowly until mixture thickens.
5. Pot into sterilised jars.

Rhubarb cordial? Got some on the go right now. Very nice diluted with fizzy mineral water.

I wish you lived near me! I love the stuff, we'd have a crumble or a pie EVERY week given half the chance! I made a rhubarb and raspberry tart the other day with sweet pastry and a lattice top sprinkled with crunchy demerera sugar - was heavenly
