Just made a batch of paneer (Indian cheese) pakoras
My 3 year old loves them!
Here's what you do:
Make a marinade consisting of:
5 x tablespoons of yogurt
2 x chopped green chillies
4 tablespoons of cornflour
1 teaspoon grated ginger or ginger powder
1 teaspoon of salt
1 tablespoon of chopped coriander
Then add some one inch square pieces of paneer to the marinade, cut to approx 3 or 4 mm thick. Set aside for an hour or so.
After an hour or so, then make a THICK and SMOOTH batter with the following:
1/2 cup of GRAM flour
1 teaspoon of cumin seeds
1 tsp coriander powder
1/2 teaspoon of salt
1/8 teaspoon of baking powder
THe batter must be thick, the trick is to add the water bit by bit.
Ok, then heat up around 1 inch depth of vegetable oil in a big pan.
Now pick up the squares of paneer out of the marinade one by one, dipping them into the batter.
Then fry in around 1 inch of oil for 3 or 4 minutes.
Done!
