    Hi,
    Am just wondering if anyone has any recipes for either mushroom or tomato soup. I want to try some homemade soups because I went through a load of tins at the supermarket and the amount of salt and fat was amazing.
    I've only said tomato and mushroom cause I love tomato soup with crusty white bread and mushroom soup for tuna and pasta bake.
    But any ones would be helpful. Thanks

      One of the easiest and tastiest soups I've made is with pumpkin or squash. I just chop up a squash and roast it with some crushed cloves of garlic and a bit of olive oil, then whizz it up with a stick blender with as much stock as you want to get the right consistency. Also nice with some crispy bacon or chorizo sprinkled on top.

        To make a simple delicious tomato soup, roughly cut up an onion, a garlic clove, tip in 2 tins tomatoes, add a chicken stock cube and a tin of water, cook up for 15 mins then whazz in a liquidiser. You can make much more complicated soups by sweating onions and veg in oil etc but it really isn't necessary. If you want to eliminate all the rubbish fat and sugar then the above method is the way to go.

        Another, finely chop or grate (I have electric grater) onions, courgettes, carrots, chop leeks, into a huge pan with stock. Simmer 15 mins and you have wonderful soup. You can leave in bits or whazz up. In bits, you'll stay feeling full for longer.

        Mushroom soup - in a pan go sliced mushies, onion, stock and milk (half and half). Simmer, whazz and add a dollop of cream and chopped chives to the bowls.
