Beetroot!? Soup?? Any ideas?

Hi, my new garden has some Beetroot that the old people left behind, I tank it's due to be pulled up now but any ideas what I can do with it!? My dad made a nice Beetroot soup, but he kind of just throws it all in and it's nice, I'm not so good!! I'm not keen on Anyang pickled so finding it hard to find Beetroot ideas that are not pickling....

If it has been in the ground all winter then it might be a bit too 'woody'.

Slice one through the middle and check if it is still moist and juicy and not dried and tough.

If it's ok, this is my recipe for beetroot soup.

Thinly slice one onion and two cloves of garlic, add to a large pan with a glug or olive oil, cook on a medium to low heat until the onion goes translucent - try not to let it brown as this will change the flavour.

Wash 6 medium beets well and trim the top and bottom, (I dont bother to peel them but it is up to you if you do) roughly chop them into 1 inch cubes, cut a large potato to the same size (peeling is optional again) and throw beets and potato into the pot with the onions.

Cook for 1 minute, stirring all the time to coat the veg, then add 1 litre of stock - I use chicken but veg will also be good. Season to taste with salt and pepper

Bring to a boil, then reduce the heat so the soup is just simmering, cover and leave to cook for about 30-45 mins, until the veg is soft.

Use a stick blender or carefully transfer the soup in batches to a blender and blend until smooth and thick. I like mine to have a slightly coarse texture, but make it to your own preference.

Return the soup to the pan and gently heat until warm.

Serve with a swirl of creme fraiche or soured cream plus buttered crusty bread for dipping.

How about simple Russian borzh?

Throw together into boiling water cut pieces of meat (optional), cut in cubes potatoes, sliced white cabbage, grated carrots and beetroot, slightly prefried onions, add 1 tbs of apple/white vinegar. If meat is not used, add vegetable stock. Boil on small setting for 30-45 min (if no meat used), 45-60 min with meat. Add freshly cut parsley and dill 5 min before ready, add salt. Serve with double cream or mayonnaise and grated garlic. Funny enough, it tastes better following day.

If you are looking at a dead easy way to enjoy beetroot - we peel, little olive oil, salt, black pepper and roast them. Lovely alongside roast potatoes etc.

You can make crisps - use a mandolin to finely slice - again, olive oil, salt, pepper - bake. Taste amazing. I tend to put the fine slices in a plastic food bag, add the olive oil, salt and pepper and then shake/squidge about until it's all covered. Then tip and spread out onto a baking tray and whack em in the oven.

Making me 'ungry just thinking about it.

Grated in salad is nice too.

As above roast them, they go all sticky and tasty. Or boil for an hour, then use in recipes such as soups and stews, I've even added it to veggie pasta sauce. It seems to retain its firmness, but the long cooking removes the earthiness.

Hi beetroot is my a favourite veg and I have four different types growing now in my allotment

Best starter is rotated or boiled beetroot sliced and then crumble goats cheese over salt and black pepper with a good drizzle of fine olive oil fantastic you will not want to eat it any other way

Hi Martin I prefer my beetroot either way warm or cold the next day

When eaten warm the beetroot melt the goats cheese a bit and it is really creamy

Does anyone else microwave their beetroot? So much quicker than boiling.

I like to eat slices of cold cooked beetroot in a bread and butter sandwich with lots of black pepper - sometimes with cream cheese instead of butter. Simple but yummy.

Or cut cooked beets into chunks, toss in oil and balsamic vinegar and/or honey and roast in the oven until caramelised.
