  • Little bits of soft fruit left over?

    I've been picking cherries, redcurrants and strawberries today until I'm sick of the sight of them - ok being an ok gardener but what do you do with it all?

    I've also been baking and having made a large bowl of frangepan (3 times the ingredients below):

    125g butter
    125g sugar

    creamed together

    add 2 eggs (organic of course) and beat

    add 125g of ground almonds, 20g plain flour

    add 1 tbsp rum or kirsch

    I had some left over and some wild strawberries and redcurrants but not enough to do anything with - there are only a limited number of tarte de fuit that I can freeze at any one time.

    So I buttered some ramikins, dropped the frangepan into them and then added the bits of soft fruit, mixed it up in the ramekins, into the oven (200 deg c) for 10 mins or so but very hot after baking the larger tarts, lovely small puds for one person.

      You can also stir up to 5 oz mixed fruits into a standard muffin recipe. Fresh fruit is gorgeous in these.
