Lovage, how do you use yours?

I was given a packet of lovage seeds a few years ago, they were about 5yrs out of date but I got a nice plant out of them.

Until now, I've never tasted lovage and I've watched it grow to 6+ feet every year and have done nothing with it. I moved it to my new herb bed this year and cut two of the thick stalks off and used them in place of celery when I was making some chicken stock. Wow! it was tasty.

I really want to use it more this year and hope you all have some ideas for me.
