  • Lazy and pickled garlic help

    My weekend plans involve sorting all my onions and garlic that has been drying out.
    I've bought jars I'll sterilise but I'm unsure on a few things if anyone can help?
    For the lazy garlic once the jars are sterilised do I wait for them to cool down before adding cold vinegar or hot vinegar?! or do I add it when the jars are still hot?
    I was going to do whole cloves of garlic and do the same process so I assume that would work in the same way.

    I think it's really up to you. I've seen both options and I presume that hot jars, hot vinegar is possibly the safest in terms of food hygiene.
    That said my last lot of lazy garlic, which I'm still using was jars straight out of the dishwasher, packed the minced garlic in and topped with cold white vinegar to cover. I've kept it in the fridge with no problems.
    My preserving book for whole garlic says, hot jars, hot vinegar.

      I've just sterilised a jar in the oven, let it cool, minced my garlic and packed tightly in the jar and topped with olive oil. We use a lot of garlic so it won't last long.

        You need to be a bit careful storing garlic in oil as there is a risk of botulism, the lazy garlic they sell in shops is preserved in white wine vinegar.

            What is it in curry paste that stops the botulism then? I guess it's the cooking.

              Can't imagine that would be a problem then although if you're using it that quick you probably didn't need to preserve it at all

                Probably not but the bulbs looked a bit manky, a case of use them of lose them.
