    I can't vouch for its effectiveness but spiralizers are supposed to turn courgettes into spaghetti, with far fewer calories than the real thing.

      This is a delicious balkan recipe for courgettes a one pot dish.
      3 tbls oil
      large onion finely chopped
      2 or 3 garlic cloves crushed
      1 LB fresh toms peeled, seeded and chopped
      2 tsp paprika
      1 1/2 lbs cougettes thinly sliced
      Salt and pepper
      1 cup rice
      1 1/2 cups water
      Parsley chopped
      plain yogurt mixed with chopped dried mint

      Soften the onion, add the garlic. Add the toms. Cook 5 mins or so until toms cook down a bit. Add courgette and some seasoning. Cook 10 or so until courgette tender.
      Add rice a,d water and simmer til rice cooked.
      Turn off heat, cover pan and leave to rest 10 mins.
      Scrape into an oven dish and bake for 30 mins or so until top is brown. Serve with yog.

        bought a cheaper spiral thingy than the one pictured and it worked fab. Had courgetti and ragu. Yum

              Love your recipe Teakdesk,I add new garlic and walking onions to mine.I cut courgettes lengthwise four times and then in half.Into pan with garlic,walking onions etc but our whole meal bread is VERY healthy so this goes on toast!

                my way of cooking courgettes/marrows and brinjals

                firstly, prepare some greek garlic sauce:

                cut the crusts off 1/4 loaf of white bread and break the crustless bread into small pieces

                add the bread to a bowl and add some milk to cover the bread to soak, then squeeze the milk out of the bread

                add the soggy bread to a blender with 5 crushed cloves of garlic, salt, black pepper, juice of 1/2 ripe lemon and a good drizzle of extra virgin olive oil

                blend until smooth (you may need to add a bit more olive oil)

                place in a bowl, cover with cling film and place in the fridge for a few hrs (not the freezer!)

                now, for the courgette/marrow or aubergine:

                slice into 5mm thick slices .... add some salt (not too much) and let it 'sweat' for approx 20 minutes (not sure why this is done, but my nan (greek and excellent cook) always done this

                rinse all the salt off and pat dry .... then add a bit more salt, some fresh ground pepper and add into a plastic shopping bag with some flour (self raising)

                shake the bag until the courgette or brinjals are well coated with flour

                deep fry in hot sunflower oil until golden brown

                serve immediately with the greek garlic sauce

                thats the way I have always eaten them

                ps: if you dont like too much garlic, use less cloves of garlic for the sauce

                try this sauce with beetroot .... it's a good combination (shop bought bettroot or home made without the vinegar)

                  Here's my courgette recipe:

                  Brown some mince, onions and courgettes by frying them (quantities to taste, but make mince and courgettes roughly the same amount). Put them all in a casserole dish, season with salt and pepper, pour a glass of white wine over them and top with grated cheese. Bung in the over at about 170 for half an hour. Delicious.

                    reading this is making me hungry. grated some courgette up and popped them in a cottage pie with onions and carrots. couldnt taste them but was nice to know there were a few more hidden veggi vitamins in there for the kids xxx

                      Mmm! Yes, I also add to the basic recipe; garlic and spring onions and, since I (unlike most other folk on the vine) have an absolute glut of radish, a good helping of halved radish.


                      BTW what are walking onions? Our homemade bread is also not unhealthy but is full of carbs which I'm trying to avoid!!!!!

                          Corr, sounds lovely, teakdesk. Courgettes and parmesan is a wonderful combo. By the way I sometimes slice them thinly, grate parmesan over the top, then grill. That is very nice too.
