Courgette, French Bean & Halloumi Salad with Potato Frittata

  • Courgette, French Bean & Halloumi Salad with Potato Frittata

    Slice 1 courgette (not too thinly) lengthways and massage with extra virgin olive oil, salt and pepper and griddle until soft and lined.

    Meanwhile, blanch a handful of French Beans in boiling water for around 3 minutes, drain.

    Slice the block of Halloumi into approx 8-9 pieces and griddle for 3 minutes either side until lined.

    Combine all veg onto a warm plate and drizzle with balsamic


    Potato Frittata:

    Boil new potatoes in small chunks

    Fry until golden in olive oil in a large frying pan

    Add halved cherry tomatoes and warm through

    Poured over 6 beaten eggs, parsley, grated cheese and allow to set

    Place under a hot grill till browned

    Turn out onto a large plate and cut into wedges


    Serve all together with houmous and crudites for all vegetarians and meat eaters alike!
