I'm a real pumpkin and squash lover and usually eat my squash roasted. My question regards BIG pumpkins. I have three huge hundred weights which don't make good roasting as they're quite watery and mild flavoured. Any tips on cooking? I'm thinking along the lines of soup but I'm not actually that keen on the pumpkin soup I've made before! Thanks in advance.

There are huge amounts of pumpkin recipes, especially in America. Halve the sugar at the minimum. (I previously lived there).
I roast mine and leave it to strain for a few hours if it's a more watery type. The liquid is used as stock and in stews, souls etc, even instead of water in porridge.
There are also pumpkin chutney recipes, candied pumpkin, the Thanksgiving favourite with pumpkin i stead of sweet potato (roasted, mashed, topped with marshmallows and baked).
Have you also tried the sweet versions of roast pumpkin with cinnamon or nutmeg? Especially delicious with coconut cream or in curries.

Pumpkin puree is so versitile - make it up and freeze batches It can then go in cakes, soups, stews, smoothies, mashes, sauces - loads!
I'm a bit dissapointed this year, as I won't have any to store - I do have some pumpkins, but they're not that nice to eat (forgot the name) - so instead we'll carve them and store for use as decorations :/
