Odd question!
Weekend before last I roasted some beetroot planning on pickling them the next day.
Following day I woke up with a raging sore throat and feeling thoroughly rotten!
Just starting to feel better and wondered if the beetroot would still be safe to pickle/make chutney with tomorrow or coming weekend?
I left it whole, with skins on, in a ceramic tray covered loosely with foil. It will have been in the fridge for 2 1/2 to 3 weeks.
Any good or bit too much of a risk?
