Years ago, we wondered - if cottage pie is made from minced beef, and shepherd's pie from minced shepherd (or lamb, if you can't get shepherd) - what do you make from minced pork? And so, we invented pigsty pie.
Quantities to feed two hungry people, or reheat leftovers the next day.
1lb pork mince
Half a leek (use the green part)
Double handful cherry tomatoes
Two or three eating apples
Potatoes, mashed. Quantity to suit appetite!
Mince cold roast pork, or fry pork mince until it stops being pink. Chop the green end of a leek into narrow rings. Halve the tomatoes (if you've only got large tomatoes, choose firm ones and chop them into little bites.) Mix these into the pork. I often add some water chestnuts - half a small can, chopped up, and use the rest of the can in stir-fry - which give a nice crunch. Or sunflower seeds, one or two handfuls.
Tip mixture into an ovenproof dish. Cut slices of apple - no need to peel them - and lay on top of mince until mince is invisible. Cover apple with a good layer of mashed potato. Bung in oven at Gas Mark 6/200C/400F until potato goes brown at edges.
This is very tasty, and so moist you won't need gravy. Serve with something green.
