Oh i want to know how to do this, does anyone have a recipe? Tried looking for one on Google, but it didn't come up with any recipes on how to pickle beetroots in balsamic.

Sorry I've checked through all my books, but they are really old, traditional ones! They didnt have balsamic vinegar in those days! Bernie
