There are loads of recipes in the threads. Usually recipes are remembered when the veg in particular is in season at the time. It really depends on what you like to grow and what you like to eat? What are you intending to grow this season?
It's too difficult a question LOL! My favourite recipes change all the tme -always learning new ones, always looking to see what's available....... Give me an idea of what you want, and I'll give you recipes.
I like just plain and simple things. Best one Oh likes is a giant Yorkshire pudding filled with loads of veg and gravy. Can be any veg depending on the season.
I can't wait for courgette season so I can have home made ratouille. We have had a lot of soups over winter, also mixed roast root veg in winter is great or kale with onions and sweet chestnut topped with poached egg. Another winner in the house is good ole summer pud (obviously in summer) However you are better to ask peeps as and when the things are about. Two Sheds has a great thread for bean recipes, in October there was a thread for pumpkin recipes etc. etc.
How about crispy Kale, toss in a little olive oil, grill or oven cook until crispy and serve sprinkled with salt. Drizzle with a little honey if you've got a sweet tooth.
My most recent favourite, but not veggie, recipe is crab and prawn ravioli with prawn bisque sauce. But, you can fill ravioli with anything you like and some veggie ones could be really delicate and delicious.
Try a puree of any root veg - parsnips, celeriac, mixed with some tiny chopped and cooked chestnuts, cook your ravioli and serve with melted butter into which you have fried sage leaves until they go crispy.
I find I get much more inventive when I have a 'glut' of veg, using what is overflowing in the fridge, I g.....gle ingredients, get some ideas, always turn out well. Courgette/ricotta lasagne I remember from last summer, and fennel/with fish, tomato soup, etc, just so many.
